La Senda Carbonic Maceration - The "Grand Cru" of our La Senda series. Our barista’s and shop customers look forward to this coffee every year. At this point I believe it's safe to call it a cult favorite.

But what is carbonic maceration and why is it important? In fact, why do we carry four coffees from the same farm year after year? It's all about the processing and the different flavor profile expressions that reveal themselves when the coffee is treated differently in the fermentation stage.

Carbonic maceration is a full cherry ferment in an oxygen free environment with the controlled addition of carbon dioxide to that environment. It’s a technique borrowed directly from the wine industry. What is the value added? The intense and fascinating flavor profile. Prosecco, sparkling wine, subtle soft fruits, and flowers all with a backdrop of the balanced, toffee, grape like character of a traditional washed La Senda.
