Our Story
Since 2009, Merit has been committed to one simple idea: better coffee, shared in community. From the start, our cafés have been places to pause – whether to get work done, connect with friends, or simply find a moment of quiet in the middle of the day.
Our team travels to Central and South America and Africa to source extraordinary coffees directly from farmers we know and trust. Those coffees make their way to Texas, where we roast them on custom-built, state-of-the-art equipment designed to bring out the best in every coffee.
But coffee is only part of the story. The real joy is in the people. Our baristas aren’t just skilled at their craft; they’re neighbors who learn your name, remember your order, and care about your day. At Merit, we believe a great cup of coffee can be more than just a drink – it can be a bright spot, a reminder that community is built one shared moment at a time.
Behind the Cup: Our Roastery
Most people never see what it takes to make a single cup of coffee. At Merit, that unseen work is where we spend our days.
It starts long before the coffee ever reaches San Antonio. Our team travels to farms in Central and South America and Africa to taste harvests, walk the rows, and build relationships with growers. We seek out coffees grown with care, often from small lots or even a single part of a farm. These coffees are limited in quantity, demanding in quality, and worth the effort.
Once they arrive here, the process continues. Since 2014, our roasting team has been testing, cupping, adjusting, and refining until each coffee reveals its best expression. What began in a 2,400 sq. ft. Southside warehouse now happens in a state-of-the-art 9,000 sq. ft. facility designed to support precision at scale.
Finally, that work meets you – in a café, at a table, in a moment worth pausing for. Because at Merit, every step of the journey leads to one simple goal: to be the bright spot in your day.
